Depending on the parents of the children you teach (and the type of daycare), you may take a different approach to this theme. Some parents do not want their children studying ghosts, vampires, witches, etc. In this case, a harvest or fall theme may be more suitable. Other parents think their child's white footprint ghost is adorable and you may be able to do more of a Halloween theme.
